Can I Eat My Sweet Potatos?

| Hey NYC Gardeners,
Of course, it never occured to me that my Sweet Potato vines would yeild great big sweet potatos! I just dug them all up. Can I eat them? Anyone have any experiences?

| You should be able to eat them. There's lots of way to use them. You can bake them & sprinkle cinnamon & a little sugar & butter on top after they are baked. You can slice them & bake them with some butter & cinnamon sugar on top. They are a great source of fiber & low in fat. Here in the South they are a staple. Have you had sweet potatoes before? |

| You can but ..... WHY? I assume you have the ornamental ones? I stored mine over the winter last year and had immense chartruse and purple vines this year. |
