Ornamental Sweet Potato / Blackie & Tricolor

Hello ... I have been gardening many years with much success and pleasure but one problem I cannot understand is why a plant would change from it's origin eg. Tricolor ornamental sweet potato to a regular sweet potato with normal green leaves. This has also happened to a red twig dogwood I have about 5 years ago. Purchased a healthly varigeted red twig but it turned to solid green leaves after one season. I do have very rich earth after many years of adding compost and fresh horse manure. A friend gave me another varigeted red twig and I have had it planted about 3 years and it has stayed white and green. A neighbor said maybe my soil is too rich or has too much acidity. It's crazy! But my plant s all look great so I am not complaining just wonder WHY???
